My current experience with usr-merge migration on Debian and Devuan is:
It basically works.
I think once it had an issue I needed to resolve manually. But as far as I
remember I never lost connection to a remote system due to this.
But as Didier wrote: It may be a bad moment until the transition is
complete. But aside probably Slackware I bet most distributions will do
the usr-merge.
I think I already converted all of my systems.
Of course with remote systems it is best to have some kind of out of band
management. Many providers of virtual machines offer access to a VM
console.
