When you mount it interactively the path is different and maybe it's
waiting for some input.

Try to add to the script:

PATH=${PATH}:/sbin:/usr/sbin

and

mount /dev/disk/ /mnt/mountpoint </dev/null

or

mount /dev/disk/ /mnt/mountpoint </usr/bin/yes

Note: just don't-know-what-I'm-doing guesses.
