I am usually hesitant to recommend browser extensions but I have had good luck with
https://darkreader.org/ - They have been around for a while on both Firefox and Chromium and seem to have a credible privacy policy/donations-based business model with a public-facing code base on MIT license. You can force dark mode for all sites that don't have a native one or toggle this functionality on individual sites.
I believe they maintain custom CSS components for popular sites and then fall back to inverting colors and then rotating the hue 180 degrees, or something like that. I have rarely had any issue from it.
