Well, since that (and more) didn't work, I changed back to most of the default UEFI BIOS config, the whacked F7 during a power cycle, to invoke the one-time boot selection menu. As opposed to the single option of "Enter Setup" provided in Legacy mode, there were around 4 options. Choosing the second one, immediately below the Windows default, rewarded me with the Excalibur install splash. Eureka!
On the adjacent NUC & monitor I'm now logged into Devuan Excalibur, so all is well with the world for tonight. Installing useful stuff not on the iso can wait till the morrow.

Legacy mode mucks it up. Go figure.

Having arrived, I can forget all about this stuff for another good part of a decade.
