    With /boot read-only, how do you expect to upgrade the linux-image
package? Are you willing to remount /boot read-write everytime you do
it? Well, it's one more burden.

    Let's say it's up to the admin to decide which level of burden s?he
is ready to accept in order to customize the OS, between entirely
home-made and whole distro with single filesystem.

    My own choice is to put all the OS permanent storage on one single
partition => dpkg/apt/apt-get/synaptic manage it all =>minimal burden.
If enough RAM: no swap -- eg: a laptop with 16GB.

    Playing with customized OS is fun in itself, eg: customized kernel
+ Busybox + custom application. But, if you want to do something else,
better concentrate on it and use a ready-made distro.
