It's to keep your ISP from spying on your DNS requests.
f course, it eans that whoever gets the DNS-over-HTTPS requests can spy on you themselves.

If they know anything, it'll be that you no longer seem to be using DNS as much.
Programs other then the browser will still be using DNS directly.

I'd look in the browser options (there are oodles of them) and see if any of them provide FND over https, and change the obvious setting.
