You have multiple serial options including wireless links.

- RS-485 ~ 100m
- SPI ~ 10m
- I2C ~ 3m
- 1-wire ~ 30-50m
- bluetooth ~ 3-5m
- wifi ~ 20-50m
- Zigbee 10-100m

Your issues will include power reticulation.
PoE over CAT-5 can deliver 5V or 12V to multiple remote locations. Other
options include solar and battery

If you standardise on CAT-5 then you can run most protocols and power in
1 cable.
