Have you tried booting the live image? I've just written that to an USB
stick and it shows up as both a 'legacy boot' and a UEFI boot device in
the boot menu of my computer (I'm using 'legacy boot' because it can
boot the system and that's good enough for me). This is also consistent
with the fdisk output:
