Two points of importance:

1) a backup snap shot should be of a number of individual "units" at a
fairly fine granularity. Firstly to avoid that the whole thing is
destroyed by a small problem, and secondly to allow successive snapshot
differences be small 9saving bandwidth and storage)

2) any encryption should be applied at the source end before backup.
This avoids a "smearing of trust", and that multiple variants of the
same data exists, which kind of reduces the strength of the encryption.

In my view, encryption is only for data protection. The remedy to avoid
illicit file change in a backup store would rather be to use file hash
codes.

For myself I'm using rsync in the mode of also saving any files the get
updated in a new, date stamped parallel tree for every backup occasion,
and with transport bandwidth limiting. In that way I keep a "moving
front" of the current files, but can also go back and recover earlier
files. That method works well for "normal files", but of course very
large files break "my" rule 1.
