In regards to the issues regarding video,

I know that Jitsi does not require one to use video, and you can turn on an
audio-only mode for yourself. I am speaking from experience here as I did
use that last time because of what I use having issues with video, hangouts
(another platform that has been used), also provides this feature.

So really any complains about using video conferencing is moot because none
of the platforms we use require a person to use video, at least to the best
of my knowledge. However it is generally preferred to use video due to the
advantages given by fsmithred.
