I have the following file (or equivalent) any time I have more than one
release enabled in sources.list:

cat /etc/apt/apt.conf.d/00defaultrelease
APT::Default-Release "jessie";

That way, only packages from jessie will be installed unless I use the -t
option to name a different release.
